The honey process in Gedeb is one of Tracon’s most celebrated offerings from the 2025 harvest. Fresh cherries arriving at the station are immediately pulped and spread in thin layers on African drying beds to prevent any mold formation. As moisture levels drop, shade is introduced to slow the drying process, allowing deeper, more complex flavors to develop.
This coffee hails from the Yirgacheffe Werka Chelchele Station, one of Tracon’s largest and most renowned washing stations in Ethiopia’s Gedeo Zone—a region famed for its high-altitude heirloom varieties. Over 705 local farmers deliver cherries daily, either directly or through trusted middlemen.
